Tom Kha Gai

High speed home cooked soup. Simple and pretty tasty on a cold evening. I've gotten variable results based on the chili paste I use. If you have a favorite brand for thai chili paste, speak up!

Ingredients:
14oz can of light coconut milk
14oz can of low sodium chicken broth
6 quarter-sized chunks of fresh ginger
1 stalk of lemongrass, cut into 1" long pieces
1lb boneless skinless chicken breast or thighs
1c sliced mushrooms
1Tbs lime juice
1Tbs fish sauce
1tsp sugar
1tsp thai chili paste
basil and/or cilantro

Boil a couple of minutes:
14oz can of light coconut milk
14oz can of low sodium chicken broth
6 quarter-sized chunks of fresh ginger
1 stalk of lemongrass, cut into 1" long pieces

Add and reduce heat:
1lb boneless skinless chicken breast or thighs
1c sliced mushrooms
1Tbs lime juice
1Tbs fish sauce
1tsp sugar
1tsp thai chili paste

Simmer 5-10 minutes until chicken is cooked through.
Garnish with basil and/or cilantro.
