Ingredients:
1c cracked wheat bulgar
3c chopped parsley
2Tbs fresh mint
5 scallion bulbs and green tops
3 tomatoes, chopped
1 cucumber, chopped
juice of 2 lemonts
1/2c olive oil
salt to taste
Soak wheat bulgar in warm water for 1 hour. Drain well. Combine ingredients and chill.
