Fresh Corn Salad

Ingredients:
4-5 ears cooked sweet corn, cut off the cob (approx. 4c)
4 cloves garlic
1 tsp salt
1 ts dried oregano
1/2 tsp ground cumin
6 Tbs red wine vinegar
3 large tomatoes, diced 1/4"
1 jalapeƱo pepper, finely minced
1 bunch green onions, both white and green parts
1 small red onion, diced
salt and pepper
garnish with cilantro or parsley

Combine all ingredients. Let stand for at lest 1 hour. Will keep for several days refrigerated.
Toss with cilantro or parsley right before serving.
