Mexi Salad Dressing

I used this as a dressing on romaine with sweet corn and black beans when I served carne asada. Creamy, lime-y, a hint of sweet -- very tasty.

Ingredients:
2 tablespoons freshly chopped cilantro leaves
1 tablespoon red wine vinegar
1 teaspoon lime zest
1/4 cup lime juice
1/2 cup sour cream
1 clove garlic, smashed
1 tablespoon honey
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper

Mix all ingredients with an immersion blender.
